This Brussels sprouts with bacon and apples recipe is a healthy holiday side that is beautiful, delicious and easy to make. I start by steaming my Brussels sprouts and then I toss them with cooked apples and onions, finishing the dish with crunchy bits of rich, salty bacon.

BRUSSELS SPROUTS WITH BACON + APPLES
1 lb Brussels sprouts trimmed and halved
4 slices organic bacon
1 small onion chopped
2 medium tart apples diced (either Pink Ladies or Granny Smith)
1 tbsp organic butter
1/4 cup chopped parsley dill would also be great here!
Salt and pepper to taste
INSTRUCTIONS
Place bacon on a microwave safe plate and cover with a paper towel. Cook bacon for four minutes or until your bacon is nice and crispy.
Melt butter in a large sauté pan and cook onion along with a pinch of salt.
While the onion is cooking place Brussels sprouts in a steamer basket and steam for eight to ten minutes or until they are nice and tender.
Once your onions are translucent, toss in your apples and cook for another four to five minutes. You are looking for your apples to get nice brown edges and to become just slightly tender.
Once the apples and the onions are ready to go, toss in the Brussels sprouts and season with some salt and pepper. Crumble the bacon over the Brussels sprouts and toss with your parsley. Adjust your seasoning and enjoy!!
Makes 4 servings.
NOTES
If you want to skip the bacon, you can add it some capers for a bright, salty flavor without the meat.

Ack.. bacon isn’t clean, it’s a Group 1 carcinogen
World Health Organization:
“8. Processed meat was classified as Group 1, carcinogenic to humans. What does this mean?
This category is used when there is sufficient evidence of carcinogenicity in humans. In other words, there is convincing evidence that the agent causes cancer. The evaluation is usually based on epidemiological studies showing the development of cancer in exposed humans.
In the case of processed meat, this classification is based on sufficient evidence from epidemiological studies that eating processed meat causes colorectal cancer.”

This is truly clean and delicious! And thank you so much for giving alternative suggestions to bacon : as a vegetarian I really appreciate that!
